Easy Black Bean Burger
  • Two 15.5 oz can no salt added black beans (drained and rinsed)
  • 2 tbsp white onions diced small
  • 2 garlic cloves peeled and minced (about 1 tbsp)
  • 1/2 cup red bell pepper (diced small)
  • 1 small jalapeño diced small (about 1 tbsp)
  • 1/2 cup quick oats
  • 1 large egg or 1 tbsp of ground flax seeds (flax egg)*
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 3/4 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp low or sodium free Southwest Chipotle seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp extra virgin olive oil for the vegetables
  • 1/2-1 tbsp extra virgin olive oil for the burgers
  • 6 burger buns (whole wheat, whole grain)
  • 1 bunch of leaf lettuce
  • 2 tomatoes (sliced)
Instructions
    Flax egg instructions
  1. Take 1 tbsp of ground flax seeds and mix it with 2.5 tbsp of warm water.
  2. Mix all of the ingredients together and set aside for about 5 minutes so that the flax egg can thicken.

  3. Burger Instructions
  4. Prep all of your vegetables.

  5. Pour 1 tbsp of olive oil in a large pan or skillet set on medium-high heat.

  6. Add your onions and red bell peppers to the pan and cook for 3-4 minutes.

  7. Add your garlic and jalapeños and cook for 1-2 minutes.

  8. Remove the vegetables from the pan and set aside.

  9. Drain and rinse your black beans in a colander.

  10. Allow the black beans to sit for about 5 minutes until all of the excess water drains out. Pat your beans dry if needed.

  11.  Add your beans to a large bowl.

  12. Add your vegetables.

  13. Add your quick oats.

  14. Add your egg or flax egg*.

  15. Add your seasonings and mix all of the ingredients together.

  16. Take a medium size baking sheet and cover it with parchment paper and set aside.

  17. Place your beans and vegetable mix into a food processor.

  18. Place the cover on top of your food processor and pulse on low about 30 seconds to 1 minute or until all of the ingredients are mixed. It is okay if you have a few beans that are still whole once you are done processing them.

  19. Remove the bean mix from your food processor and place it into a bowl.

  20. Using a 1/3 measuring cup, scoop out the mix from the bowl and then form it into a patty. You will make 6 patties.

  21. Place the patty on the baking sheet.

  22. Repeat steps 17 and 18 until all of the patties have been made.

  23. Preheat your oven to 375 degrees.

  24. Place your patties into the oven. Flip the burger after 10 minutes.

  25. Pour 1/2 -1 tbsp of extra virgin olive oil into a small bowl.

  26. Take a basting brush and dip it into the bowl.

  27. Lightly baste each burger after you flip them.

  28. After 9 minutes have passed, remove the burgers from the oven and flip again. Baste the top of the burger with olive oil. Place the burger back in the oven for 1 more minute.

  29. If you would like to add cheese (Muenster, Swiss, Cheddar, Pepper Jack, Feta, vegan cheese) to your burger, add it 1 minute before it is done baking.

  30. Toast your burger buns.

  31. Remove your burgers from the oven, add your favorite toppings and serve immediately.

Add Organic Chipotle Mayo, avocado and fresh jalapeños to make a spicy black bean burger.
