Ingredients
  • 2 medium tomatoes
  • 1 large green bell pepper sliced (remove seeds and ribs)
  • 1 english cucumber (peeled and sliced and cut in half)
  • 1/2 cup red onions (sliced thin)
  • 4 oz feta cheese (cut into cubes)
  • 1/2 cup kalamata greek olives (sliced)
  • Dressing
  • 4 tbsp etra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 large garlic clove (chopped small)
  • 1 tsp Dijon mustard (premium quality brand)
  • 1/2 tsp oregano leaves
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
Instructions
  1. Prep and clean all of the vegetables per your preference.

  2. Add the cucumbers to a bowl.

  3. Add tomatoes.

  4. Add the green bell peppers.

  5. Add the red onions.

  6. Add the kalamata greek olives and mix the ingredients together.

  7. Add the feta cheese.

  8. Drizzle half of the salad dressing over the ingredients.

  9. Gently mix all of the ingredients together.

  10. Drizzle the remaining salad dressing over the ingredients.

  11. Add additional salt and pepper to taste if needed.

  12. Serve.

Note

If you are making the salad ahead, add the dressing before you serve it.

Substitute the feta cheese for vegan cheese.

Substitute the dressing for vegan dressing or substitute the honey for a vegan alternative.
