Ingredients
  • 2 yellow squash
  • 1 zuchinni
  • 1 medium red bell pepper (medium chopped)
  • 1 medium orange bell pepper (medium chopped)
  • 1/2 cup red onion (medium chopped)
  • 2 garlic cloves (minced)
  • 1 shallot (peeled and chopped)
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp Italian seasoning (or to taste)
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1/8 tsp black pepper (or to taste)
  • 1/2 tsp Lawry’s Casero Total Seasoning
Instructions
  1. Clean and prep your vegetables.

  2. Chop the zucchini and yellow squash in half and then cut across (into half rounds).

  3. Add the olive oil to a large pan set on medium high heat.

  4. Add the shallots and garlic and cook for about 30 seconds.

  5. Add the bell peppers to the pan. Mix the bell peppers with the shallots and garlic and continue cooking for about 3-5 minutes. Adjust the heat if needed. Be careful not to burn the vegetables.

  6. Add the red onions to the pan, mix them with the other vegetables and continue cooking for about 1 minute. Adjust the heat if needed.

  7. Add the zucchini and squash.

  8. Add the Italian seasoning, garlic powder, paprika, black pepper and 1/4 of the Lawry’s seasoning.

  9. Mix the zucchini and squash with the other vegetables in the pan.

  10. Add the remaining Lawry’s seasoning.

  11. Continue cooking the vegetables for 8-10 minutes or until the vegetables are cooked per your preference.

  12. Taste and add additional Italian seasoning to taste.

  13. Serve.
