Veggie Tacos

Easy veggie tacos that are perfect for Taco Tuesday!

  • 1-1 1/2 cups shredded lettuce (clean and rinsed)
  • 1 roma tomato (cleaned, rinsed and diced)
  • 1 large avocado (diced or chopped small)
  • 1/2 lime
  • 1/4 cups fresh cilantro (cleaned and rinsed for garnish)
  • 4 low sodium corn tortillas
  • 2-4 tablespoons olive oil or vegetable oil
  • 1 cup Oaxaca or vegan shredded cheese
  • 1/2 cups sour cream or plant based sour cream
  • 1/4 teaspoons Mrs. Dash Southwest Chipotle seasoning (optional)
  • pepper to taste
  • salt to taste (optional)
  • Salsa of your choice for topping
  1. Set your stovetop temperature to medium high. Add oil.

  2. Add each tortilla to the pan and cook about 1 minute until it is crisp on the bottom. Fold the tortilla making it into a shell.

  3. Hold the tortilla firmly about 1-2 minutes while it cooks with a spatula until it holds its shape.

  4. Decrease the temperature if needed to avoid burning the tortilla.

  5. Remove from heat and allow to cool about 1 minute. Repeat these steps until all tortillas are done.

  6. Add sour cream to each tortilla.

  7. Add guacamole, then lettuce and tomatoes.

  8. Add cheese.

  9. Sprinkle salt, pepper and Mrs. Dash seasoning over all of the tacos (optional).

  10. Squeeze lime juice over the tacos.

  11. Garnish with cilantro.

  12. Top with any salsa of your choosing.
