Street Corn off the Cob

Ingredients
  • 4 cups or 4 ears of corn
  • 1 1/2 tablespoon extra virgin olive oil
  • 1/2 cup red onions
  • 1 garlic minced
  • 1 small jalapeño seeded and diced
  • 4 tablespoons light mayo
  • 1 tablespoon plain Greek yogurt
  • 1/2 cup cotija cheese (and more for garnish)
  • 2-3 tablespoons lime juice
  • pinch of salt to taste
  • pepper to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 cup cilantro (and more for garnish)
Instructions
  1. In a small bowl, mix the mayo, yogurt, garlic and lime and set aside.

  2. Remove the corn from the cob or use frozen corn.

  3. Set your stovetop to medium-high heat and the oil to the pan. (Adjust heat as needed per your stovetop)

  4. Add the corn and sauté for 2-4 minutes or until the corn has cooked and has slightly browned.

  5. Add the salt and pepper.

  6. Add the mayo mix to the pan and mix with the corn.

  7. Add the chili powder and the paprika.

  8. Add the jalapeños, red onions and cilantro.

  9. Remove the pan from the heat.

  10. Pour the corn mix into a bowl.

  11. Add the cotija cheese and mix.

  12. Add additional salt and pepper to taste.

  13. Garnish with more cotija cheese, cilantro and jalapeños.

  14. Serve immediately or chill.
